JaQuan Snellings has built cocktail menus, led floors full of bartenders, and trained more people to work a bar than most bars will ever employ. He is exactly the person you want standing behind yours.
He learned it everywhere, and from the ground up. He ran shifts at a Fort Mill pizza place and managed a Rock Hill store with a team of nearly twenty. Then the bar took hold. At a rooftop spot in Columbia he led seventeen bartenders and bar backs, rebuilt the cocktail menu, and pushed revenue up better than twenty percent. At Bartaco in Huntersville he trained new hires by the hundreds. By the time he landed here, by way of Charlotte, he’d worked just about every corner of the Carolinas’ bar scene.
That local map matters. JaQuan has poured in Fort Mill, Rock Hill, Columbia, and Charlotte, which means he has spent years on the other side of the bar from the very people who’ll walk through our door.
Every drink holds a story.
At Maisie’s, his experience runs the covered bar patio, where a good many evenings here begin. The cocktail list carries more than pretty names. The Warwick remembers the neighborhood where the Schaefers became a family. The India Hook takes the peninsula’s old name. The Bramble bows to a classic cocktail and to Scotland at once. A drink that means something ought to taste like it was made on purpose, and that is the bar JaQuan runs.
His bar looks after the guest who isn’t drinking, too. The mocktail menu here is a full menu, built so the designated driver, the parent, and the person who simply doesn’t all get handed something worth ordering. The taps hold to the promise on the wall: good beer, poured by someone who can tell you what to try next.
Then there’s the part that never reaches a glass. JaQuan has spent his career teaching other people to do this well, hundreds of them. He builds bar teams that hold up on a full Friday night, and he minds the people beside him as closely as the drinks going out. Every good bar has an invisible half, the inventory and the waste and the numbers, and he keeps all of it tight without draining the joy from the room.
One more detail, because it’s a good one. He holds a degree in systems and networking. The easy, unhurried host out front is also the one quietly making sure the whole machine runs.
He’s early here yet, and his best work is still ahead. You can already feel the shape of it, though.
